According to Kathleen Cervantes, director of nutritional services at Diane Zucker, local community member from the Wagonseller neighborhood in Ukiah, said, “I can’t wait for the café to open, I already love the food in UVMC’s cafeteria and am looking forward to the fresh sandwich, salad and juice options.” “Some of the healthy food options available will be a daily special Panini, other specialty sandwiches, flavorful smoothies, fresh juices, and daily-made salads,” said Chef Jim Stuart of UVMC. “We’re also supporting local business and will be using them as vendors, for example Schat’s Bakery breads, Calistoga Roastery, Oco Time and others. Café 260 patrons can enjoy the relaxed atmosphere and casual healthy dining experience,” said Stuart.
